Here's a light yet tasty dish, perfect for serving as a side with your beef and broccoli or for an Asian-inspired weekday lunch. Cut marinated tofu into cubes and place in a mixing bowl with grated carrots, chopped Chinese cabbage, sliced bell pepper and onions, lettuce and finely sliced cucumber. For the dressing, mix together honey with soy sauce, a bit of grated ginger, sesame oil and a neutral oil (peanut, canola). Drizzle the dressing over the salad, toss gently to coat and serve.
