If you are able to pour Champagne with one hand (placing your thumb into the 'punt' at the bottom of the bottle), great! It does take a little practice... Then use your other hand to tilt the flute to the side so that when you pour, the Champagne runs down the side of the glass and hits the bottom of the flute more slowly. Wait until the bubbles slow and then continue filling the glass. This method helps to maintain the bubbles longer. Twist the bottle as you finish pouring to clear any drips from the edge of the bottle.
