Green beans are best bought loose in big handfuls—avoid the pre-packaged, often pre-trimmed bunches, as the plastic wrap they're sold in can speed up the aging process.  Loose green beans should feel very firm and crisp to the touch, like they would make a beautiful snap when broken in half.  Steer clear of beans with spots and pay close attention to the ends, avoiding ones that are dry and shriveled.
