3. Pre melt the cheese

... but no matter what cheese you decide upon, never, ever add it to your burger cold! Firstly, take the cheese out of the fridge in advance, and allow it to come to room temperature. Firmer sliced cheeses should be placed on top of the patty during its last cooking minutes (close the lid on the grill if you have one), while soft, crumbly cheeses like goat's cheese or blue cheese can be put on the burger after it has come off the grill as they melt much faster.
