4. Find the perfect bun, and toast it

A good bun literally holds a cheeseburger together. In this department, size and quality are equally important. A too-large or too-small bun gives you a poor meat-to-bread ratio, so choose a bun that is approximately the same size as your patties (remembering that the patties will shrink as they cook).  For quality and flavor, we love brioche buns, potato buns and Kaiser rolls, which are soft and mild without being too crumbly. Finally, lightly toasting the bun before assembling the burger not only enhances flavor and texture, it also prevents sauces from leaking through the soft bread and making it mushy.
