While avocado is certainly heart-healthy and the good-for-you kind of fat, it is also super high in calories. Therefore, if you happen upon a fast food item that includes guacamole, you can be sure it will not be very "heart healthy" in the end. Add to that two strips of bacon, two slices of Pepperjack cheese, plus the "Santa Fe" sauce, and your 8-ounce black angus beef burger just surpassed the 1,000-calorie mark.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
