Insalata Di Nervetti

Here's a typical Milanese dish that you probably don't see everyday. Commonly served as antipasto, insalata di nervetti is composed of boiled, chopped up tendons and cartilage from veal or beef shanks. It's typically combined with various chopped vegetables, a few seasonings and dressed with olive oil and vinegar. Simple and tasty, it's definitely worth trying if you go to an all-you-can-eat aperitivo in Italy.
