The Health Benefits of Honey

It's true that honey contains a lot of sugar, which can be harmful in large quantities. However, in moderation and as an alternative to sugar, honey boasts many valuable components—about 200 different ones—that make it healthy. For instance, it contains enzymes such as phosphatase, diastase, and amylase, which have antibacterial and digestive benefits. Additionally, antioxidants like flavonoids can strengthen blood vessels, have antiviral properties, and act as antispasmodics. Honey also contains vitamins such as Vitamin C, Vitamin B1, Vitamin B2 complex, Vitamin B6, Vitamin H (Biotin), pantothenic acid, and folic acid, as well as minerals like magnesium, calcium, sodium, potassium, and phosphorus. The acids in honey can also create an antibacterial effect, making honey a true multitasker. However, many of these beneficial compounds are effective only up to 104°F. So, if you're drinking hot milk with honey to combat a cold, make sure not to overheat the milk to preserve the many valuable nutrients.

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
