Although meat is definitely the easier option for grilling, fish is just as tasty, typically lower in fat and makes for easier clean-up. To make fish on the grill, you also have the possibility of cooking a whole one. Rinse the fish of your choice in cold water and dry with paper towels. Prepare a marinade of olive oil, lemon, aromatic herbs, salt and pepper, and let the fish soak in it for at least 2 hours. Place it into a foil parcel and cook for 20 to 30 minutes on the grill according to its size. Don't hesitate to ask the salesperson at the fish counter to help facilitate the cooking process (clean, debone and gut, etc.). 

And if an entire fish is too much, try grilling individual salmon fillets, using the same foil-packet method. In this case, you'd reduce the cooking time to about 10 minutes maximum.

  • 1 onion
  • 5 - 6 thick rashers bacon
  • 1/2 lb sausage meat
  • 1/2 cup tomato paste
  • 2 cloves garlic, diced
  • 2 bell peppers, diced
  • Salt
  • 1 cabbage head


Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
