Watch out for these ‘light’ summer meals that are anything but!

Fresh fish on a bed of rice sounds light enough, right? Not so much. The calorie counts found in sushi are comparable to that of fast food. Sure, the ingredients might be a tad fresher, but if you're getting about 340 calories for 6 pieces of salmon nigiri (and when have you ever stopped there), you're looking at racking up a hefty meal for the day. Our advice: just don' t do it everyday.

Dive into summer with this fresh, light and healthy mango salad!

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
