Salt cod

This specialty from the south of France is called brandade de morue, which combines salt cod with mashed potatoes, cream, garlic and spices. There is some debate about whether or not potatoes should be included, but if you're leery about fish, it helps buffer the flavor. To make, soak salt cod at least 12 hours beforehand. Prepare mashed potatoes as usual. Drain and rinse the salt cod before boiling it. Cook until it flakes easily with a fork. Heat garlic and shallots in an oiled skillet, add heavy cream and bring to a boil. Turn the heat down, and simmer until slightly reduced. Drain the cod, and dry with paper towels. Remove the skin and debone the fish. Roughly pulse the cod in a food processor into chunks. Add the creamy garlic preparation as you go along. Then combine the cod mixture with the mashed potatoes and a squeeze of lemon juice. Season with salt and pepper to taste. Serve with toasted bread crisps.

  • 1/4 cup / 50g of softened butter
  • 1 egg (divide the yolk and white)
  • 1/4 cup / 50g of sugar

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  2. Add the flour and mix. Roll into a ball.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.
