Though this dish takes time to prepare, it makes a filling and delicious weeknight dinner. Simply saute 1 onion in a large saucepan or high-sided skillet, then add arborio rice and cook until translucent, about 2 minutes. Add broth and cook until almost completely absorbed by the rice. Continue adding broth by the ladle, letting the rice absorb it each time. The whole process should take about 20 to 25 minutes. Then add fresh or frozen shrimp at the end, cook until pink and sprinkle with fresh chopped parsley to serve.
