If you're serious about cutting back on calories, you need to be very choosy about where they're coming from. Alcohol is NOT your friend, when it comes to downsizing your figure, not only because it contains empty calories but also it encourages you to eat foods you normally wouldn't and in much larger quantities. Enjoy a glass of wine on special occasions, if you must. But otherwise, take a break from the booze until you've reached your goals.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
