Mexico's Yucatan Peninsula is currently the largest producer of the extremely piquant habanero pepper, so you can imagine that the local cuisine has got quite a kick to it. One of the most famous dishes of the region is cochinita pibil, which is a slow-roasted pork dish, that requires marinating the meat in a strong acidic citrus juice and annatto seed, which lends it that characteristic orange-y/brownish color. While the dish itself isn't traditionally spicy, it's often served with a full habanero chili to punch things up a notch.
