Goat cheese and Sancerre

Once again, staying within the same region is a key to successful pairing. Goat cheeses such as those from Chavignol are from the same geographic area as Sancerre. This pairing works well because the sumptuous, soft texture of goat cheese, with a characteristic saltiness and freshness fits well with the fruity, fresh and mineral side of Sancerre. The Sauvignon Blanc in Sancerre has undertones of grapefruit and grass, a flavor that is also often present in goat cheese.
