Looking for a soup to warm you this winter? In a large saucepan, add 1 1/2 quarts beef stock, 4 diced carrots, a piece of fresh ginger, 1 crushed garlic clove, 1 stalk lemongrass and 1/2 bunch thinned coriander. Simmer for 25 minutes, then add 2 1/2 cups raw peeled and deveined shrimp and continue cooking another 10 minutes. Just before serving, add some fresh basil leaves.
