Bananas Foster

A classic southern dessert, the flaming Bananas Foster was invented at the New Orleans restaurant Brennan's in the French Quarter in 1951. Vast quantities of bananas were being shipped into the port city from Central and South America, and Brennan's chef Paul Blangé was tasked with creating a dish that would use the suddenly plentiful fruit.  At once simple and sophisticated, the Bananas Foster is made from bananas caramelized in butter and brown sugar, flambéed in rum and served over vanilla ice cream. It's boozy, refreshing, rich and fruity all at once: a bit like New Orleans itself, if we may say so. Recreate this classic American recipe here.
