Everybody claims to be the King that inspired this recipe, but it looks destined to be one of those unsolvable mysteries (and no, it wasn't Elvis Priestly). The recipe actually dates back to the late 1800's, but this hearty entrée, which is essentially diced chicken in cream sauce, with sherry, mushrooms and vegetables became a fixture of the dining table in the Fantastic Fifties. Chicken à la King is often served over rice, pasta or bread but we love this updated version which plates it up with delicate, golden baked puff pastry cups.
