Here's a great recipe for those who love a taste of the exotic. In a frying pan, cook 1 pound large peeled shrimps in 2 tablespoons oil. Remove the shrimp from the pan and set aside. Add 2 chopped onions and 1 large tablespoon curry to the pan and mix together. Pour in 3/4 cup coconut milk and simmer. Add the shrimp and season with salt as required. Serve hot with white or basmati rice and finely chopped coriander.
