Pizza Bianca Romana

Roman white pizza is a typical Roman street food made of flat plain pizza dough sprinkled with coarse salt. It's typically thinner than traditional focaccia bread and can be eaten as is or stuffed with mortadella (the preferred recipe by locals), which is a type of cold-cut made of ground, heat-cured pork specked with cubes of pork fat. It comes from Bologna, Italy and probably the closest equivalent in America would be bologna sausage meat. Whatever you do, don't mistake this for a sandwich—hardcore traditionalists would be offended. Get the recipe here.
