Risotto

Risotto is a classic Italian dish that can be prepared in myriad ways. It's as popular in Italy as it is abroad, but there are still a few things to remember when it comes to making it a success. The best risotto texture is al dente—which comes from cooking it with plenty of TLC for at least 20 minutes on the stove top. It should be evenly cooked and constantly stirred with a wooden spoon. Arborio or Carnaroli rice are the best varieties, due to their ability to take on a creamy, somewhat "sticky" texture that's characteristic to a good risotto. Here's a basic recipe to get your started.
